Your pan, your rules. Stack it your way. The best burger you've ever had — because you made it exactly how you like it.
Divide the Ground beef (20% fat) into equal portions — handle the meat as little as possible.
Shape each portion into a patty slightly wider than your bun, as they shrink during cooking. Press a shallow indent into the centre with your thumb to stop them doming up.
Season both sides generously with Salt and Black pepper immediately before cooking — not in advance.
Heat a cast iron pan or griddle to very high. Cook the patties for 3–4 minutes per side for medium, pressing down firmly for the first 30 seconds to get good contact with the surface.
Lay a slice of Cheddar or American cheese on top in the last minute of cooking. Cover the pan briefly to help it melt.
Toast the Brioche or sesame buns cut-side down in the pan for 1 minute until golden.
Build the burger: bottom bun, sauce from the Ketchup, mustard, mayonnaise, Butter lettuce leaves, Ripe tomatoes, the cheesy patty, Red onion, Pickles, and the top bun. Serve immediately.
